Oh My Agave!

A group of gray green, spikey Agave sisalana plantsThe mention of our neighbor to the south typically conjures up images of sunny beaches, arid deserts and plateaus, a rich cultural history, delicious cuisine, and of course tequila. So, on a recent trip to Mexico City it came as no surprise to see the landscape dotted with agave, cacti, and various shrubs, growing ever more frequent as we slowly made our way out of the bustling city and toward Teotihuacan. It was here, at a well-established tourist outpost just outside of the ruins, that we were introduced to the many uses of the agave that can be found all over the area.

At Teotihuacan, visitors are able to enjoy a tasting tour through the various spirits that can be made from agave. We began by tasting pulque, a “non-distilled traditional alcoholic beverage produced by the fermentation of the [agave] sap known as aguamiel” (Escalante et al., 2008). This sweet, viscous, milky drink had a mild sugariness that was very pleasant, with the texture of a smoothie I had made in my blender at home. We then moved on to sampling some mezcal, a liquor that is much more similar to the tequila that many are familiar with, with one important distinction. Katie Robbins at Delish (Robbins, 2021) states that “while mezcal can be made from a blend of one of 250 types of [agave] to be classified as tequila, a bottle must be at least 51 percent blue agave (Agave tequilana).” Similarly to champagne, tequila must satisfy these certain conditions to be considered truly tequila, otherwise it is a mezcal. What better venue for this lesson than at the ruins of an ancient metropolis at 10:00 in the morning?

After a healthy amount of samples, our guides continued to explain that these herbs can provide many other products besides just spirits. The Maya and Aztecs, who lived across what is now Mexico, have been utilizing these plants for the past several thousand years to construct crude fabrics, papers, and tools that could be used for a multitude of purposes (Siegler, 2005).

Brown, pressed herbarium specimen of Agave sisalanaThough there are many species of agave in cultivation, there are a few species (notably Agave sisalana [sisal] and A. fourcroydes [henequen]) that are cultivated specifically for their ability to produce long, durable fibers that can be made into a variety of useful textiles. These fibers are acquired by scraping away the upper layers of each large, rigid leaf and “hand stripping” these fibers out of the plant, in a process called decortication (Future Fibers, 2022). The fibers must then be dried and brushed before they can be processed into a textile for use by humans. Fibers achieved through this process can be used in a variety of different ways. Most simply, these fibers can be woven into a durable thread and used as is. In turn, this thread can be further manipulated into string or twine, as well as textiles for clothing and carpets, and is especially useful nowadays as a buffing cloth for steel (Future Fibers, 2022). At a shop just outside Teotihuacan, these fibers have been used to make a wide variety of souvenirs and trinkets, in a bit of a departure from its historic utilitarian purpose.

The sharp prickles that grow at the end of agave leaves can be used as a needle, in conjunction with the sisal thread, to sew together pieces of sisal textile. The uppermost layers of the leaves can be used as a sort of paper, once peeled off into a thin, flexible sheet. A paper can also be made by pressing the pulp of the agave plant, in a manner more similar to that of paper production with woody pulp.

These agave fibers played an important economic role across southern Mexico until the early 20th century, when the introduction of synthetic plastic fibers at a much lower cost caused demand to shift away from the naturally occurring sisal. The industry faced other challenges as the world around it globalized, with sisal production being brought to Brazil and East Africa in a bid to increase production and profits. These areas, though similar in climate, have since outpaced Mexico in sisal production (Vuorinne, Heiskanen, & Pellikka, 2021). This was achieved by straying slightly from the traditional methods of cultivation, harvesting, and processing used by the Maya and Aztec peoples, and utilizing technology that was unavailable a few centuries ago.

Ancient pyramid under a blue sky with puffy white cloudsEfforts are being made to restore the historic levels of sisal production in Mexico, as well as globally, in a bid to combat the increased dependence on synthetically produced fibers. Through groups like the Food and Agriculture Organization of the United Nations, emphasis is being placed on building sustainable production mechanisms that can satisfy global demand with a supply of natural sisal fiber. 

Visiting this ancient city was a wonderful experience that I cannot recommend highly enough. If seeing an archaeological wonder up close, coupled with a lesson on agave-based alcohol aren’t enough, consider the knowledge you can gain on the importance of utilizing the natural resources we have been provided by this planet, as opposed to concocting synthetic stand-ins. This experience is evidence enough we still have more to learn from the many, many generations that came before us.

Know Your Tarragon – The Herb of the Month

French tarragon in a potIt pays to pay attention to plant labels. Especially in the case of tarragon–especially if you are planning to use tarragon in your cooking. If you are growing tarragon for culinary purposes, be sure the label on the plant or seed that you buy says “French tarragon” or Artemisia dracunculus ‘Sativa’, to be sure. If the label says only “tarragon,” you may be purchasing Russian tarragon, which is not the tarragon you want for your roast chicken or béarnaise sauce.

French tarragon — Artemisia dracunculus ‘Sativa’    

The botanical name for tarragon, Artemisia dracunculus, comes from the Latin word meaning “little dragon” or “snake.” It is thought that the plant was given this name because its roots resemble coiled snakes, and the leaves look like a dragon’s tongue. In very early days, this plant was indeed used to treat snake bites. 

French tarragon is famous for its distinctive, anise-like taste and smell. It is a classic culinary herb in French cooking and is one of the four fines herbes, chervil, parsley, and chives making up the other three. It is used in sauces such as béarnaise, remoulade, and tartar. Tarragon vinegar is great for making salad dressings, and French tarragon enhances the flavor of meats and fish.

It is said that pilgrims in the Middle Ages put sprigs of tarragon in their shoes to keep them from getting tired on their journey (Kowalchik, 1988). Nicholas Culpeper, a seventeenth-century physician and herbalist, recommended it to treat urogenital conditions, as did Johann Dragendoff, a late-nineteenth-century German pharmacist and chemist (Engels, 2014). 

Native Americans use the wild species of the plant for tea. They treat a wide range of medical problems such as dysentery, colic, rheumatism, and eye and skin issues with it. It is also used to deter insects (Moerman, 1998).

Today, tarragon is used in the European and non-European cosmetology industry, where companies add it to moisturizers, shampoos, and lotions. The essential oil is used in some perfumes. Studies suggest that French tarragon has potential use as a food preservative (Ekiert, 2021).

In 2015, the Nobel Prize in Physiology or Medicine was awarded for the discovery of the effectiveness of some properties of Artemisia annua in treating malaria. Since then, there has been renewed interest in researching the medicinal properties of A. dracunculus as well. The authors of a recent report say, “Contemporary research on the biological activity of the above-mentioned raw materials (leaves and essential oil of French tarragon) has proven new findings in their activity–antibacterial, antifungal, and antiprotozoal effects, as well as extremely valuable antioxidant, immunomodulatory and antineoplastic properties“ (Ekiert, 2021). So, something old is new again.

French tarragon grows in Europe and Asia and prefers the cooler areas of the United States. It needs a cold dormancy period to come back the next year and does not do well in the hot humid areas of the South. It needs fertile, well-draining soil and full sun and can grow to 2-3 feet high. It does not produce viable seeds, so must be propagated vegetatively with cuttings or by root division. Buyer beware when buying tarragon seeds. French tarragon does not produce seeds, so the seeds may be from the Russian tarragon plant, which looks similar but has a different taste.

Russian tarragon — Artemisia dracunculus (syn. dracunculoides)

Russian tarragonRussian tarragon is a French tarragon look-alike. Some people even call it an “imposter tarragon.” Its leaves are a lighter green, have a rougher feel, and do not have much flavor. Russian tarragon produces flowers and viable seeds and is easier to grow than French tarragon. It is considered a perennial in most locations. Early in my herb discovery days, I was fooled by this plant and thought I was buying French tarragon. I wondered why it did not have the anise flavor in its leaves.

Russian tarragon is native to southern and eastern Russia, parts of Asia, and western North America. It is used primarily as a medicinal herb in Russia and Middle Eastern countries to Herbal supplement with Russian tarragonstimulate the appetite, flush toxins from the body, and ease the pain of a toothache, sores, and cuts. Other traditional uses in Russia include as an aid to digestion, relief for nervous conditions, aiding the liver and renal function, and as an anti-bacterial, anti-cancer, and anti-inflammatory agent (Engels, 2014). Recent studies show that the anti-diabetic properties of an extract of Russian tarragon, when taken with body-building supplements, helps to create muscle mass without a need for a high intake of carbohydrates, and helps the body recover from strenuous exercise (Pischel, 2011). 

Mexican tarragon — Tagetes lucida

Also known as Texas tarragon, winter tarragon, and Mexican mint marigold, Mexican tarragon is not in the Artemisia genus at all. But its leaves have a flavor similar to French tarragon, so it can be used as a substitute for it. Its flowers and leaves can be used in salads or dried and ground to use in tea. The fresh leaves and flowers can also be infused in vinegar for use in salad dressings. The leaves were a flavoring in the cocoa-based Aztec drink chocolatl.

Mexican tarragon thrives in hot, humid weather and tolerates freezes and is not fussy about soil, making it an herb that is ideal for the South. This plant also produces bright yellow, daisy-like flowers in the fall that are a nice addition to the landscape. 

Mexican mint marigold in flowerMexican tarragon has been used in traditional Mexican medicine to treat gastrointestinal disorders, relieve mental stress or symptoms of a hangover, as well as for infections caused by parasites (Ventura-Martinez, 2020). Recent studies in the laboratory indicate that the use of Mexican tarragon to relieve some gastrointestinal problems may be an effective use of the herb.

Madalene Hill (1913-2009), noted Texas herbalist and past President of The Herb Society of America, is credited with introducing this South American herb to the United States. For those of us who like to cook with French tarragon and like a nice plant in our garden, we have Madalene to thank.

Stalking Evening Primroses in the Rockies

Each spring, I hike trails in the northern Front Range of the Colorado Rockies with a group of fellow wildflower enthusiasts. This spring, much of the western U. S. had been suffering from severe heat and drought. However, the northern part of the Front Range, as locals call Colorado’s eastern foothills, had been blessed with unusually cool temperatures and drenching rains. As a result, wildflower displays were the best seen in years. Flowers were bigger, and plants were much taller than usual. Wild evening primroses are one of the delights of this display.

The picture above shows one of this year’s flowers on steroids, O. howardii, Howard’s evening primrose. Note the size compared to the handle portion of the hiking pole. Oenothera species are believed to have originated in Mexico and Central America, although they have now spread from North to South America. Many species form hybrids with one another. As a result, their appearance is now quite variable, with heights ranging from four inches (alpine) to ten feet (Mexico) and leaves that can be entire, toothed, lanceolate, or ovate. Flower colors also vary widely and can be yellow, white, pink, purple, or red. However, the most common colors in our area are yellow and white, with white flowers typically found in dry, desert habitats.

Sometimes evening primroses are hard to identify because flowers open late in the day. This is because they have evolved in sequence with their main pollinators, nocturnal moths. Typically their flowers begin to wither and close in the sun the day after flowering. The plant below, O. cespitosa, tufted evening primrose, shows flower buds that are only partially open. Often at the start of a hike, we find evening primroses aren’t open yet, and we see them to better advantage on the way home. Tufted evening primrose

This primrose is one of four varieties of tufted evening primroses in Colorado. Which one? We’ll leave that to the experts. Do you find any evening primroses growing wild in your area? It is fun to see how many you can identify out on the trail or scattered here and there in fields near where you live.

Cayenne Pepper – Herb of the Month

Hot! Hot! HOT! – but not the hottest! Cayenne pepper, Capsicum annuum, is hot, but it reaches only 30,000 – 50,000 Scoville Heat Units (SHU) on the Scoville Heat Scale. For comparison, the ‘Carolina Reaper’ pepper reaches 1.4M – 2.2M SHU, and the jalapeño pepper just a meager 2,500-8,000 SHU. The Scoville Scale was developed by pharmacist Wilbur Scoville in 1912 to determine heat levels based on subjective sensitivity to capsaicinoids in peppers. Although modern lab methods are used today to determine the heat level of peppers, the Scoville Scale is still the common way to classify pepper heat intensity (Mountain Rose Herbs, 2021).

Cayenne pepper, a member of the Solanaceae, or nightshade, family, is native to tropical North and South America. The term “cayenne pepper” can generically refer to any of a number of peppers within the Capsicum annuum Cayenne Group, which is characterized by being long (about two to five inches long, and about a half-inch in diameter), tapered, and with a curved tip. The fruits are usually red, and grow hanging from the plant instead of upright. It is easy to grow as a perennial in USDA zones 9-11, and as an annual in other parts of the country. It prefers full sun and soil that is moist, fertile, and well-draining. Because of its colorful fruit, some varieties of cayenne pepper can make interesting container plants. It is usually dried and sold as a powder. Cayenne pepper is named after a city and river in French Guiana, where it grows abundantly. New Mexico leads in the commercial production of the cayenne peppers used in hot sauces (Bosland, 2010). 

Some say that Capsicum annuum is the oldest domesticated plant. Archaeological research suggests that Capsicum annuum was first domesticated in Mexico and northern Central America. Remains of chile peppers have been found in archaeological sites dating 8,000 years before our present time. Archaeologists speculate that the early use of Capsicum annuum was to spice up the bland diets of roots, tubers, maize, and beans of Indigenous peoples. However, artwork and early written works of Indigenous peoples indicate that Capsicum annuum had medicinal and ritualistic uses as well. The Mayans used peppers to treat asthma, coughs, and sore throats, while the Aztecs used chiles to relieve toothaches. The ethnobotanist Dr. Richard Schultes documented many interesting, current uses of Capsicum among modern Amazonian peoples during his 50 years of study of Indigenous peoples of South America. Cayenne pepper by Wikimedia CommonsPortuguese explorers brought the hot peppers to Europe in the late 15th century, reducing the demand for black pepper, Piper nigrum (Russo, 2013). Once in Europe, Capsicum annuum spread across the continents, where it was readily integrated into local cuisines to the point that people considered it a native of their own country. A survey of a grocery store’s hot sauce section demonstrates the popularity and variety of hot sauces of many different cuisines. To some, especially in the South, hot sauce is a “must-have” accompaniment for all meals, lending humor and insight to the quote “Spicy food lovers are pyro-gourmaniacs” (author unknown).

Capsaicin is the compound responsible for the fiery heat sensation of cayenne peppers and is found in the membrane surrounding the seeds. Because of the heat sensation it produces, capsaicin has been effectively used for topical relief of arthritis and nerve pain. When applied to the skin, capsaicin affects the amount of substance P released, which is a neuropeptide involved in the perception of pain (Bosland, 1996), although some say that the burning sensation from capsaicin merely helps one to forget the source of the pain. Cayenne’s medicinal benefits are still being investigated today. USDA Agricultural Research Service scientists have found that a component in the cayenne pepper kills fungi and yeast in crops and humans (Suszkiw, 2001).

An interesting study done in 2017 showed that eating foods containing cayenne pepper “resulted in significantly higher satiation at the end of the meal and one hour post intake. Further, adding cayenne pepper was associated with subjects feeling significantly more energetic and overall satisfied one hour post intake. During intake of [a] soup with added cayenne pepper, desire for salty and spicy foods were significantly decreased and desire for sweet and fatty foods were significantly increased.” The study concluded that cayenne pepper could be used to influence eating habits (Anderson, 2017). This conclusion echoes some of the traditional reported medicinal benefits of cayenne: that it is good for cardiovascular health, increasing weight loss, and stimulating the appetite.

Tamarind – Herb of the Month

The tamarind tree (Tamarindus indica) is one of many tropical herbal trees. Its leaves, bark, wood, roots, and fruits have many uses. The tamarind tree Tamarindus indicais also an evergreen, long-lived landscape tree, reaching a height of 40 to 60 feet tall and a width of up to 25 feet wide. Its pinnate leaves close up at night. The branches droop to the ground, making it a graceful shade tree. A mature tree can produce up to 350-500 pounds of fruit each year. It is native to tropical Africa and is in the Fabaceae family. 

One of the earliest documented uses of tamarind was found in the Ganges Valley of India, where wood charcoal dating back to 1300 BCE was discovered. Tamarind was mentioned in ancient Indian scriptures as early as 1200 BCE. Arab physicians were reported to be the first to use the fruit pulp as medicine. It was the Arabs who named the tamarind, calling it “tamara hindi” or Indian date. It is thought that the Arabs were responsible for the spread of the tamarind through the Persian Gulf region and Egypt. There is documented use of tamarind in Egypt in 400 BCE. The tamarind was brought to the Americas by the Spanish in the 1600s. A tamarind tree was planted in Hawaii in 1797.

Tamarind-based drinksThe tamarind tree grows well in USDA Hardiness Zones 10-11 and therefore, is not commonly seen in the continental United States, except in southern Florida. It produces a showy light brown, bean-like fruit, which can be left on the tree for up to six months after maturing. The sweet-sour pulp that surrounds the seeds is rich in calcium, phosphorus, iron, thiamine, and riboflavin and is a good source of niacin. The pulp is widely used in Mexico to make thirst-quenching juice drinks and even beer. It is also very popular in fruit candies. The fruit is used in Indian cuisines in curries, chutneys, meat sauces, and in a pickle dish called tamarind fish. Southeast Asians combine the pulp with chiles and use it for marinating chicken and fish before grilling. They also use it to flavor sauces, soups, and noodle dishes. Chefs in the United States are beginning to experiment with the sweet-sour flavor of tamarind pulp. Did you know that tamarind is a major ingredient in Lea & Perrins® Worcestershire Sauce? Tamarind CandyThe fruit pods are long-lasting and can be found in some grocery stores, especially those serving Hispanic, Indian, and Southeast Asian populations. 

All parts of this ancient tree have been used in traditional medicines in Africa and Asia and have a long list of maladies that they have treated. According to Purdue’s Horticulture and Landscape Architecture Department (https://www.hort.purdue.edu/newcrop/morton/tamarind.html), “Tamarind preparations are universally recognized as refrigerants in fevers and as laxatives and carminatives.” The ground-up seeds have been used as a poultice for boils, while the boiled leaves and flowers were used as poultices for sprains and swollen joints. The bark is astringent, tonic, and a fever reducer. An infusion of the roots has been used to treat chest complaints and leprosy. It has also been used to treat sunstroke, Datura poisoning, and alcohol intoxication. According to WebMD®, there is not sufficient evidence to determine the effectiveness of tamarind to treat most of these illnesses. However, research has shown that eye drops containing tamarind seed extract do improve dry eye.

Throughout the tropical world, there are many legends and superstitions regarding the tamarind tree. Here are a few:

  • A Buddhist parable about tamarind seeds says that they are the symbol of faithfulness and forbearance. 
  • Some African tribes believe that the tree is sacred, and some Indians believe that one should not sleep under one because of the acid it “exhales” during the night.  
  • Some even believe that nothing will grow under a tamarind tree. However, Maude Grieve, in her 1931 book, A Modern Herbal, claimed that “some plants and bulbs bloomed luxuriantly under the tamarind trees in her garden in Bengal.”
  • The Burmese believe that the tree is the dwelling place of the rain god, and that the tree raises the temperature of the ground beneath it.
  • In Nyasaland, tamarind bark is soaked with corn and fed to livestock as a way of guaranteeing their return if they are lost or stolen.
  • In some Asian countries, it is believed that evil spirits inhabit the tamarind tree and building a house where it grows should be avoided.
  • In the Caribbean, old tamarind trees are believed to have spirits living in them.

The tamarind is an incredibly useful tree. The young leaves and shoots are eaten as a vegetable, and the flowers and leaves can be added to salads. The flowers are also important as a pollen source for bees. The leaves can be tamarind seed podsused as fodder for domestic animals and food for silkworms. The leaves are also used as garden mulch. 

The seeds are ground to make flour, or roasted and used as a coffee substitute or as an addition to coffee. The seeds are also processed to produce a natural pectin and food stabilizer. There are many more uses of the seeds that are too numerous to list. 

The oil produced from the tamarind is culinary grade oil and is also used in specialty varnishes, adhesives, dyeing, and tanning.

The wood of the tamarind is another example of exceptional usefulness as it is very hard and insect resistant. It makes great handles for tools and is prized for furniture and paneling. It is considered a valuable fuel source because it gives off intense heat. The branches of the tamarind are used as walking sticks. The bark contains tannins and is used in tanning hides and is also used to make twine.

Lea & Perrins Worcestershire SauceThe fruit pulp is useful as a dye fixative, or combined with sea water, it cleans silver, brass, and copper. In addition to all of these uses, school children in Africa use the seeds as learning aids in arithmetic lessons and as counters in traditional board games.

The next time you reach for a bottle of Worcestershire sauce, remember the ancient tamarind tree and its usefulness in the tropical parts of our world.

HSA Webinar: Molé, Pan and Chapulin–Oaxacan Style

Face it, 2020, for the most part, has been a bust! The pandemic has cancelled events, reduced travel, and all but eliminated herbal adventures. As we dream of a future where we can begin to move about the globe more easily and safely, now is the perfect time to research new destinations. mapInterestingly, just south of the US border in Mexico there is a unique community that is home to sixteen distinct indigenous peoples living in a mild climate, enjoying unique botanic diversity. 

Oaxaca, Mexico, is a community known for its culture, crafts, textiles, ceramics, cuisine, and complex use of plants. While Mexico is known for its Day of the Dead celebrations, Oaxaca offers the most spiritual and unique Dia de los Muertos Celebrationcelebrations of them all. The Day of the Dead festival (or Dia de los Muertos) is celebrated from October 31st thru November 2nd. During this time, locals believe the gap between our world and the spirit world opens, and loved ones are invited back for a celebration. Offerings are placed on altars in homes, schools, cemeteries, and more. Of course, the spirit world needs nutrition to support their return to the mortal world, so delicious foods play a central role. This melting pot of cultures has created signature dishes including molé (generic for sauces used in Mexican cuisine), pan (an egg based sweet bread made especially for the Day of the Dead), and chapulines (Sphenarium grasshoppers).
